Sweet Potato Cake 고구마 케이크

Loaded with delicious mashed sweet potatoes between soft and thin layers of the Genoise sheets, coated in soft cake crumbs with a subtle hint of vanilla, crowned with peeled pistachios and a sweet strawberry, this is one of the most authentic Korean cakes that is still famous in Korea for its simplicity, but rich and thick mousse-like texture, often served very lightly frozen like an ice-cream cake.
